I haven't been making my snacks as much as I would like lately, so I decided to start with this Everyday Granola. 7 ingredients (not counting the salt and vanilla) and 3 steps...she could't make it easier for us! You can create different combos using this basic recipe. I swapped coconut flakes/pumpkin seeds/honey for raisins/oats/maple syrup. Use whatever nuts and dry fruit you have!
I will be topping yogurt with this granola or eating it as cereal with milk. YUM.
I can't get enough of Hummusapien's snacks. And everything she makes! I love her, her spirit, and her passion. Alexis is one of the first Dietitian's I started to follow. She inspires me everyday to pursue my passion for nutrition and reminds life is filled with wonderful adventures. Her travel posts lately have me craving some fun weekend excursions. When the hubby is done with school I'm hopping on the Hummusapien travel train.
These are a spin on her Vegan Raspberry Chocolate Chip Muffins. I made these religiously for awhile. I swapped a few ingredients for what I had on hand. I like to roll mine in balls instead of making muffins. Here are the modifications I made:
- 1 cup oat flour for 1 cup brown rice flour
- 1 cup almond meal for 1 cup whole wheat flour
- 2 tbsp ground flaxseed for 2 tbsp chia seeds
- I didn't have raspberries
- baked the balls for 10 mins
I will be pairing these with Barney Butter snack packs...Josh bought me every flavor for Christmas. The man has my heart.
