Breakfast-the BEST Meal of the Day!

Do you ever get stuck in a breakfast routine? The same cereal, yogurt, toast, etc. How boring to eat the same thing everyday, week after week! 

Don't sweat it. I am here to share with you some wholesome breakfast options, many of which can be prepped ahead of time to get you through the work week. There is quite a variety of options to meet everyones savory or sweet morning cravings. What better way to start your day than with a delish breakfast! 

My Go-To Smoothie Bowl (5 minutes!) 

What a beautiful way to start the day with this pink smoothie bowl! SUPER easy and portable, for when you are on the go. I added 1/4 avocado, 1 tbsp PB, and 3 tbsp Siggis Plain Kiefer (in addition to the milk the recipe calls for). It is just the right creaminess and sweetness! I was low on yummy toppings, but this Nutty Banana Hemp Granola would be a great addition. 

Pumpkin Pie Slow Cooker Oatmeal

Anything I can make in the crockpot is a WIN. Throw it all in and let it be for hours. No stirring or checking every 5 mins! This 5 ingredient breakfast is perfect because it is packed full of fiber (oats, pumpkin) and protein (steel cut oats). Just what we all need to stay full for whatever the morning holds! I used Quaker steel cut oats and left out the crasins. Feel free to customize toppings as you like. 

Mexican Brunch Salad    

Save this breakfast for a day you don't have to be to work right away. Bake the sweet potatoes ahead of time and assemble the rest the morning of. Feel free to leave out some of the herbs if you don't have them on hand. I love having a slow morning and making myself a nice breakfast. This recipe is perfect for one of those days! 

Chia Seed Pudding with Peanut Butter Drizzle

First off, Raquel's blog is beautiful and anything she makes is beautiful. This breakfast is beyond easy and can be made in a large batch for the week. Chia seeds are full of healthy fats, protein, fiber, and calcium for you non-dairy eaters. 

Southwest Turkey Breakfast Stacks

I saw this recipe and thought GENIUS. I never thought of making this combo for breakfast. I love the simplicity! Protein, carbs, fats, fiber and an abundance of nutrients in 1 meal. It would also be a great addition to meal prep for lunch or dinner.

Vegetables for breakfast?! YES. A sweet and savory combo that is great for a portable breakfast or a mid-morning/afternoon snack.

Our "Anniversary" Meal + Self Care Tips

Yesterday was our engagement anniversary! Some may say why celebrate when you were engaged, now that you're married?? Because all anniversaries should be celebrated! I love doing something extra to make an anniversary, birthday, holiday, etc. special. It doesn't mean you have to buy a gift or plan an extravagant party. It can be as simple as making a nice meal, opening a bottle of wine, and watching a few episodes of New Girl before bed. 

I've been dying to make Simply Taylor's Spicy Almond Butter Brussel Sprouts from her new cookbook. Josh loves spicy, I love almond butter...these brussels are totally us! They were AMAZING. 

I also did some mid-week meal prep while making our dinner. Mid-week meal prep is a great way to not feel overwhelmed to cook all your food over the weekend. Definitely suggest it! 

Josh has a crazy work schedule and some days he doesn't get to sit down for lunch until 2-3pm...that is not lunch time especially when he goes to work at 5am! I usually pack easy options that don't require him to sit down for too long or that he can bring along to class. As of lately he made a simple request for lunch-chicken, brown rice, veggies. All 3 can be made in large batches and packed in 1 day. All I have to do is add in a few snacks-usually yogurt/cottage cheese with fruit, a smoothie, nuts, or a bar (square bar, KIND, Larabar). I also made hard boiled eggs for a mid-morning snack in the oven.

Preheat oven to 325. Place eggs in a muffin tin. Bake for 30 mins. Place in a bowl of cold, ice water. Let sit for 10 mins and peal. SO EASY. 

The main course was Alexis's Baked Spaghetti with Kale, Mushrooms, and Tofu Ricotta. If you can't tell from the picture, we throughly enjoyed it. It was like lasagna, but so much easier to make. The tofu ricotta I could eat by the spoonful! I don't love tofu, but the combo of tofu + hummus + nutritional yeast was devine. Don't get me wrong I love cheese and ricotta filled lasagna, but this was a wonderful creation. We paired it with avocado toast to scrape the bowls clean. Yum. Yum. Yum. 

It serves 6-8 unless you are Josh and I with a large appetite. Perfect to make and reheat for 2-3 meals during the week.

How to Create a Self Care Box: I love this idea and will be compiling mine this weekend. I know everyone can use some TLC and this box is an easy reminder of that.

She provides a great list of of ideas how to nourish yourself physically, mentally, and emotionally. I will be making my own list, taping it on the fridge, and in my planner.

Salmon Sundays are a staple in the McKinney household and anything in bowl form. So simple!

Crispy Turmeric Coconut Chicken Tenders

We love Turmeric! We add it to our eggs, chicken, fish, rice. It makes bland food look beautiful! Maybe beautiful is a strong adjective, but turmeric gives food a bright yellow-orange color and a little kick of spice! Turmeric is a great to fight inflammation throughout the body...if you have stress from work, fitness, or daily life, hop on the turmeric train. 

The Greatest Creamy Cilantro Sauce

If you love guac, then you will love this sauce. It's creamy, tangy, and perfect to use as a dip, spread, or sauce. We ate it with tortilla chips and will be using the rest to top bean burritos. 

Easy, Peasy Baked Falafel


I made these with red lentils this time around instead of green (old pic). Looking forward to using them for these! Falafel Kale Salad Sandwich. 

Chocolate Peanut Butter Cookies For Two


I think Josh's face sums up the goodness. We make these on the regular! Gooey and chocolately. 

Here is a grocery list for what you need:

-2 limes
-1 lemon

-1 small zucchini
-1 pint cherry tomatoes
-1 large avocado
-1 bunch of cilantro

-1 jar green chile salsa
-panko breadcrumbs
-unsweetened shredded coconut
-2 cloves garlic
-olive oil
-flour (only need 2 tbsp) 

-2 salmon filets
-1 lb skin-less chicken breast
-2 eggs
-1 bag lentils 

-1 bag farro or brown rice 


Customize this list after looking in your fridge and may already have some of these ingredients! Decide what sides or additions you may want to add to these meals. Add the extra items to your list and get a move on to the grocery store! 

Satisfying Snacks

Ya'll I'm SO excited...I lived In KY for a year, I think I can say ya'll. My lovely, talented friend has released her cookbook! Real Food, Real Simple  by Simply Taylor. Get it while it's hot-on Amazon or at Target and Barnes and Noble. The recipes are simple, packed with nutrients, and yummy! 

I haven't been making my snacks as much as I would like lately, so I decided to start with this Everyday Granola. 7 ingredients (not counting the salt and vanilla) and 3 steps...she could't make it easier for us! You can create different combos using this basic recipe. I swapped coconut flakes/pumpkin seeds/honey for raisins/oats/maple syrup. Use whatever nuts and dry fruit you have! 

I will be topping yogurt with this granola or eating it as cereal with milk. YUM. 

I can't get enough of Hummusapien's snacks. And everything she makes! I love her, her spirit, and her passion. Alexis is one of the first Dietitian's I started to follow. She inspires me everyday to pursue my passion for nutrition and reminds life is filled with wonderful adventures. Her travel posts lately have me craving some fun weekend excursions. When the hubby is done with school I'm hopping on the Hummusapien travel train. 

These are a spin on her Vegan Raspberry Chocolate Chip Muffins.  I made these religiously for awhile. I swapped a few ingredients for what I had on hand. I like to roll mine in balls instead of making muffins. Here are the modifications I made:

  • 1 cup oat flour for 1 cup brown rice flour
  • 1 cup almond meal for 1 cup whole wheat flour 
  • 2 tbsp ground flaxseed for 2 tbsp chia seeds
  • I didn't have raspberries
  • baked the balls for 10 mins

I will be pairing these with Barney Butter snack packs...Josh bought me every flavor for Christmas. The man has my heart.
